2018 Sutton Grange Fairbank Cabernet Merlot

Sutton Grange's 'Fairbank' range is named in honour of the estate's original name in the 19th century, but the wines are so totally Sutton Grange with then-chief winemaker Mel Chester putting her signature stamp on this delicious Cab Merlot blend.

Sourced from Sutton Grange's organically-farmed vineyards on the granite slopes of Langanook (Mount Alexander), the Cabernet Sauvignon (90%) and Merlot (10%) grapes are fermented separately with 100% whole bunches in large open fermenters. After fermentation, the wine is matured for 18 months in French oak barrels (10% new) before blending and bottling.

Plenty to love here: loads of cassis and berry backed up with lavender, spice, and herbaceousness.
