It was hand-picked and whole bunch pressed before wild fermentation in stainless steel. Crucially, it spent 10 months on fine lees to build texture but saw no acid additions. The result is pure, racy and intense.\u003c\/p\u003e\n\u003cp\u003eExpect lifted aromas of lemon blossom, lime conserve and Thai basil. On the palate, it has a 'river stone' minerality and a kick of pink peppercorn spice. It possesses the tension and drive of a good Riesling but with a distinct Italian twist.
