2024 Domaine Fevre AC Chablis
Nathalie and Gilles Fevre run a family domaine that practically defines what classic, unpretentious white Burgundy should look like. They farm their parcels sustainably, focusing heavily on getting the raw translation of the dirt straight into the glass without any heavy-handed winemaking tricks getting in the way.
The fruit here is pulled from vines averaging 15 to 25 years of age, though they fold in a few older parcels dating back to the 1950s and 1960s to add some extra baseline weight. It's all grown on Chablis' famous Kimmeridgian limestone - ancient, fossil-heavy soils that give the region's Chardonnay its signature saline snap.
The Fevres lock this away in stainless steel tanks and leave the juice resting on its fine lees just long enough to build out a softer texture that balances the classic nervy acidity of Chablis.
It drinks incredibly taut and focused, trading heavy buttery flavours for tart orchard fruit, sharp citrus zest, and a briny, chalk-dust finish. This is Chablis 101 - sleek, fine-boned and delicious. This is great value from a family-owned domaine in the heart of the region.
