Everything was fermented wild in oak – around 15% new – and went through full malo during six months on lees. It was bottled unfined and filtered, keeping that natural texture front and centre.\u003c\/p\u003e\n\u003cp\u003eThe wine hits that sweet spot between freshness and richness – white peach and grapefruit with a touch of almond and spice.
