While his high-end bottles get all the trophies, this "Wit Versnit" is arguably his best-value play. It’s grown out in Montagu, a rugged, mountainous area where the limestone soils give the wines a completely different energy to the warmer coastal regions.

The 2024 is a blend of 55% Chenin Blanc and 45% Colombard, taken from the same property that produces their cult-status "Steen." Colombard used to be the workhorse of the brandy industry, but here it adds an incredible, crunchy acidity and a pithy texture that makes the wine feel alive in the glass.

They don't rush things in the cellar. The fruit was whole-bunch pressed and fermented naturally, then tucked away in a mix of old oak and concrete for 10 months. That time on the lees is the secret sauce; it gives the wine a lovely bit of weight and a "wet stone" mineral character that keeps it from being just another simple fruity white.

On the nose, it’s really pretty - think orchard blossom, pear, and a bit of tropical guava. The palate is light but definitely not lean, with a focused, linear drive and a dry, saline finish that just screams for food. It’s clean, poised, and makes for a brilliant aperitif or a partner for a piece of grilled snapper.
