The Bannockburn Riesling comes from Block 4 on The Elms Vineyard, one of the oldest plots on the property, now into its 32nd year.\u003c\/p\u003e\n\u003cp\u003eThe vines grow on free-draining schist gravels, producing fruit that’s always high in natural acidity with great purity. In 2025, a slow, steady ripening season gave Riesling with real concentration and balance. The grapes were hand-picked, whole-bunch pressed, and fermented naturally before being chilled to stop the ferment at the ideal point - leaving around 56 g\/L of residual sugar and 9.5% alcohol.\u003c\/p\u003e\n\u003cp\u003eThe wine has lift and detail: lime, elderflower and a hint of mint, all carried by bright acidity. It’s medium-sweet, but the sugar and acid sit perfectly together, making it feel light and fresh rather than rich.
