The vines are farmed organically and biodynamically, and everything is done by hand.\u003c\/p\u003e\n\u003cp\u003eThe 2025 season was cool and late, so ripening came slowly and evenly. The fruit was hand-picked, whole-bunch pressed, and fermented with wild yeast for nine weeks until nearly dry, with just 5 g\/L of residual sugar. It stayed on lees for a few months before bottling, no fining or filtration.\u003c\/p\u003e\n\u003cp\u003eThe result is firm and dry, with lime, orange zest and nectarine flavours over a chalky, mineral base. The acidity is crisp but balanced – enough to keep it tight without feeling sharp.
