2025 Havilah Pink Fizz Pet Nat

Ricky Evans doesn't really miss. Best known for his very handy work with Two Tonne Tasmania, this Pet Nat sits under his Havilah moniker - named after his cracking wine bar in Launceston. It is designed to be exactly the kind of thing you’d want to drink there: fun, immediate and delicious.

The 2025 release is mostly Pinot Noir with a dash of Chardonnay. Ricky fermented about half of it in barrel to build some texture, then blended it late in the harvest and bottled it while the ferment was still happy and active. He's always a bit of a nervous waiting to see how the fizz turns out, but this year it has landed perfectly.

The bubbles are fine and well-integrated, not aggressive. It’s fresh, fruit-forward and absolutely made for guzzling. It has the seriousness of good fruit and Ricky's winemaking chops, but delivered in a totally carefree package. Stick it in the fridge, get it icy cold, and drink it with gusto.
