It’s 35-40% each of Chardonnay and Pinot Noir, with Aligoté and a touch of Gamay making up the balance, all grown on limestone soils and made the traditional way – bottle-fermented and aged on lees for texture.\u003c\/p\u003e\n\u003cp\u003eIn the glass, it’s pale and bright with fine bubbles. You get citrus, green apple and white flowers, with a nice bit of brioche and creaminess from the lees ageing.
