2020 Jean-Francois Ganevat Chardonnay Varrons VV

Les Varrons is one of Ganevat's most contemplative Chardonnays. The old vines sit on clay and limestone soils in Rotalier, some of them dating back to the early 1900s, drawing from deep marl and pulling out a concentration and aromatic depth that younger vines simply can't replicate.

The 2020 spent four years on lees with indigenous yeasts and no added sulfur, aged in the ouillé style - topped up, not oxidative, keeping everything fresh and precise. Unfiltered, minimal intervention, enormous patience.

The character is tense rather than generous. Citrus peel, yellow apple, hazelnut, a light smokiness, and a salty, stony mineral thread that runs all the way through the finish. It's a wine built on nerve and length rather than plushness. As one description of the wine puts it: Burgundy in the head, Jura in the blood.

Not a quick-sip white. One that rewards your full attention.
