2024 Matassa Blossom

'Blossom' is Tom Lubbe’s top white wine, drawing on 95-year-old vines that have seen it all. A blend of Grenache Gris and Macabeu, it’s a wine that manages to feel both ancient and incredibly fresh.

The winemaking is a bit of a mix: the Grenache Gris is direct-pressed, while the Macabeu gets two weeks on skins to build some shape. Everything is then tucked away in foudre to ferment and age on lees. It’s a slow, thoughtful winemaking process that pays off in the glass with a texture that is silky and broad but underpinned by a distinct stony mineral vein.

It isn't a loud or flashy wine. Instead, you get these subtle layers of orchard fruit, dried flowers, and a faint saline lick on the finish. A sophisticated, living wine that shows exactly why Tom is such a reference point for the region.
