2025 Gembrook Hill Sauvignon Blanc

While most Australian expressions of the grape aim for simple fruit, Andrew Marks looks toward Sancerre, focusing on old-vine fruit, wild yeast, and maturation in large, old French oak to build a wine of serious detail and texture.

The warmer 2025 season has delivered a version with a bit more punch and complexity than usual. You get a face-full of grapefruit rind, lemongrass, and nectarine, all tied together with notes of woodsmoke, tonic water, and a riverstone mouthfeel. It’s intense and well-powered, but it never loses its stony mineral core.
