2025 Pooley Butchers Hill Chardonnay
The Butcher’s Hill Chardonnay continues to climb the ranks of Tasmania’s elite whites.
Grown on the steep, north-facing slopes of the historic Richmond site, the vines dig into unique dolerite soils that provide a massive structural foundation for the fruit.
While it shares the same crystalline purity as its Cooinda Vale sibling, Butcher’s Hill generally offers a bit more curve and generosity. The winemaking is precise: hand-picked fruit is put through a cool vinification process and aged in fine-grained French oak. The result is a wine that feels incredibly refined but carries an inherent power and riper, more rounded mouthfeel that is characteristic of the site.
It’s all about balance - layering fine oak integration with intense orchard fruit. It is a powerful, world-class expression of place that sits right at the top of the tree for Tasmanian Chardonnay. It’s built for the long haul, though its current polish makes it very hard to leave in the cellar.
